SHOYU (SOY SAUCE) KOJI

DRESSING / SEASONING

INGREDIENTS

  • 2 tbsp of Shoyu Koji
  • 2 tbsp of vinegar
  • 1 tbsp of sesame oil
  • A pinch of sesame

INSTRUCTIONS

  1. Mix the ingredients.
  • Add the minced onions if you like.
  • No need to add vinegar in case of using Shoyu Koji Black Spore.

TAKIKOMI GOHAN
– Japanese seasoned rice with veggies –

INGREDIENTS

  • 3 cups of white rice
  • 3 cups of water
  • 1/2 carrot
  • 2 mushrooms
  • Veggies you like
  • 3 tbsp of Shoyu Koji
  • 1 tbsp of Shio (salt) Koji

INSTRUCTIONS

  1. Rinse white rice
  2. Add water, Shio Koji, and Shoyu Koji in Step 1.
  3. Cut the veggies and put them in Step 2. Do not mix so much.
  4. Soak rice for 15 to 30 mins.
  5. Place rice (Step 4) in the rice cooker and press the start button.

FRIED RICE

INGREDIENTS / 2 servings

  • 2 servings of cooked rice
  • A clove of garlic
  • 2 mushrooms
  • 1/2 onion
  • Veggies you like
  • 2 tbsp of Shoyu Koji
  • 1 tbsp of sesame oil

INSTRUCTIONS

  1. Mince the garlic, and cut the veggies and the mushrooms.
  2. Put sesame oil in a pan and heat it. Put the garlic and stir it on low heat.
  3. Put the veggies and the mushrooms in Step2, and stir-fry them well on medium heat.
  4. Put cooked rice in Step3 and stir-fry then together for 5 mins.
  5. Add Shoyu Koji in Step and stir-fry them together 3 to 5 mins.
